<p><strong>Preparazione</strong><br />
Soffriggete nel burro la cipolla tritata finemente, senza bruciarla. Unite la carota e il sedano a pezzettini e i piselli. Diluite la farina in un bicchiere di brodo caldo e versatela sulle verdure, regolate di sale e aggiungete tutto il brodo. Unite la foglia di alloro, incoperchiate e fate cuocere per circa 40&#8242;. Togliete l&#8217;alloro, passate tutto al setaccio, rimettete nella pentola e aggiungete un pezzetto di burro crudo, il prosciutto a dadini e il prezzemolo tritato. Diluite eventualmente a vostro piacimento con altro brodo caldo. Lasciate scaldare la crema di piselli a fuoco lento e servite con i crostini.</p>

In una pentola fate bollire 2 litri d&#8217;acqua salata con mezza cipolla la carota, il pomodoro, il sedano, il prezzemolo, gli spicchi d&#8217;aglio schiacciati, mezzo bicchiere di vino bianco e qualche grano di pepe bianco.<br />
Tuffatevi le spigole e lessatele per circa 15 minuti.<br />
Sgocciolate delicatamente i pesci con un mestolo forato, filtrate il brodo attraverso un colino a maglia fine e tenetelo da parte in caldo per la cottura del risotto.<br />
Ricavate dai pesci tutta la polpa e dividetela a pezzetti.<br />
In una casseruola, possibilmente di coccio, fate soffriggere la cipolla rimasta tritata finemente con 3 cucchiai di olio d&#8217;oliva;poi versate il riso e lasciatelo tostare mescolandolo in continuazione.<br />
Bagnate con il vino bianco rimasto e fatelo parzialmente evaporare, Coprite con due-tre mestoli di brodo di pesce.<br />
Proseguite la cottura a fuoco lento, aggiungendo brodo bollente e mescolando continuamente.<br />
Alla panna unite la scorza del limone grattugiata e il succo filtrato.<br />
Mescolatevi i pezzetti di spigola un pizzico di sale e pepe,amalgamate la salsa al risotto quasi cotto,unite la rucola tritata grossolanamente e mescolate.<br />
Spegnete il fuoco e lasciate riposare per qualche istante prima di servire.</p>

<p>Spezzettate i fagiolini, affettate le zucchine, i pomodori, la cipolla e il peperone, dopo aver tolto semi e filamenti.<br />
In una insalatiera versate 4 cucchiai d&#8217;olio, mettete il peperoncino e rimescolate, schiacciandolo; aggiungete aceto e sale, sbattete per qualche minuto con una forchetta, togliete il peperoncino, poi unite le verdure, basilico, origano e il tonno spezzettato.<br />
Rimescolate di nuovo e servite.<br />
Potete sostituire l&#8217;aceto con succo di limone</p>

Per La Salsa Royale:<br />
1 Uovo 5 Cl di Panna 1 Cucchiaio di Zucchero 1 Noce di Burro e Zucchero A Velo<br />
Preparazione<br />
</strong></strong><strong>S</strong>etacciate la farina in una terrina, unitevi il latte, la panna, le uova, il sale, lo zucchero e l&#8217;olio e lavorate il tutto fino ad ottenere un impasto omogeneo e fluido. Lasciatelo riposare per 1 ora circa. In una padella di 18 cm di diametro fate fondere un pezzetto di burro e  cuocetevi qualche cucchiaiata di composto in modo da ottenere una crepe piuttosto sottile. Procedete fino ad esaurimento dell&#8217;impasto: dovrete ottenere 10 crepes. In una terrina lavorate il burro morbido con metà dello zucchero, il sale, la scorza di limone e i tuorli. Unitevi poi la ricotta, passata al setaccio, l&#8217;uvetta, messa a bagno nel rum e scolata, e gli albumi montati a neve con il resto dello zucchero.<br />
Farcite le crepes con il ripieno preparato e mettetele in una pirofila imburrata con i lembi chiusi rivolti verso il basso.<br />
In una terrina sbattete l&#8217;uovo, la panna e lo zucchero servendovi di una frusta, quindi versate la salsa sulle crepes, cospargetele con qualche fiocchetto di burro e fatele cuocere in forno a 200 gradi per 25 minuti.<br />
Cospargete con lo zucchero a velo e servite subito.</p>
